Founded by Jaap Korteweg, a livestock farmer by profession, and acquired by Unilever in 2018, the brand makes plant-based protein products such as burgers, sausages, nuggets and chicken and minced meat substitutes, developed for meat lovers, but who also care about the environment. The brand’s products will be available from March 1 for the foodservice channel.
In 1998, following an outbreak of swine flu, Korteweg opted to modify his diet and become a vegetarian. It was then that he began to devise plant-based alternatives, in collaboration with chefs and food experts. Seeing that he was able to bring all the characteristics of chicken or beef to his new plant-based protein products, he founded The Vegetarian Butcher.

Ferran Adrià (El Bulli) tastes The Vegetarian Butcher without knowing that it is 100% vegetable meat. After the tasting, Adrià declares «It is a chicken thigh. Probably organic or from free-range chickens in the south of France».
Store in a tightly closed container at a temperature of -18°C or below. Once thawed keep refrigerated for a maximum of 3 days. Do not refreeze once thawed. The product should be cooked until the inside is very hot.
Frying pan: Heat a frying pan with a little oil. For best results we recommend, once thawed, sauté 3 or 4 minutes until golden brown and the inside is very hot. Oven: Preheat the oven to 200°C and bake for 10-12 min. Serve hot.

En 2016, Koffeman y el cofundador Jaap Korteweg construyeron una planta de producción más grande en Breda, una ciudad del sur de Holanda. En la nueva planta, los clientes pueden tomar clases de cocina y aprender cómo se hacen las carnes.
